This easy and healthy US Potato Salad in Dill Yogurt Dressing recipe is one of my favorite snacks to whip up when I need something that can boost my energy and satisfy my tummy. I would normally have this as my pre-work out grub since it is very light and US Potato is good energy booster aside from its many health benefits.

Now allow me to give you a little back story on why I am sharing this healthy recipe to you and my love for US Potato. Months ago, I have ditched several bad health habits I have been doing with reckless abandon for years now.
To give you a clear idea about the bad habits I ditched; I quit smoking and gave up my sedentary lifestyle. I will expand on this perhaps on my future blog posts because I really want to share how I have gone cold turkey for months now without relapse. I might also share how I am really doing my best to keep an active lifestyle because the usual drawback of quitting smoking is gaining weight.
And don't worry, I am not sick. It just so happen that I have felt that it is time to pay attention to my health.
For now, let us go back to this awesome US Potato recipe because this is one of those which I have been enjoying while I am on my journey to a better health.
US Potato is known as a good source of Vitamin C, Vitamin B6, Fiber, Iron, and Potassium (more than that of a banana, surprise!) It is also naturally fat, sodium, and cholesterol free. I don't want to go very technical on you my dear readers but I trust that we all know how important these things are when we are talking about good health.
As I previously stated, I am now trying to keep an active lifestyle as opposed to spending most of my hours in front of my computer. So now more than ever, I need all the vitamins and nutrients I can get to keep me going. I am thankful that US Potato got all that.
Moreover, US Potato also contains variety of phytonutrients with antioxidant activity. I have spent years puffing cigarettes and now that I have ditched the enemy, I am all for those antioxidants which can help me stay as healthy as I can be.
In my quest for an active lifestyle, I have incorporated some sports to my activities like badminton which I enjoyed the most these days. I find comfort knowing that US Potato can help restore electrolyte balance in the body for optimum body function. Since it is also rich in Vitamin B6 which is responsible for body's performance and endurance, I am confident that I can still try doing other sports I fancy.
US Potato has several health benefits especially to those who are athletic or just simply keeping an active lifestyle. As much as possible, I am incorporating more US Potato to my diet these days. So I am sharing this recipe with you now.
I use yogurt for dressing because it complements the US Potato the way the usual mayonnaise would without being too heavy. I add a very tiny dab of mustard because it gives a little kick. For this recipe, I used simple prepared mustard but feel free to substitute it with Dijon variety when available. If you don't want the assertive taste of herb, go easy on dill. Lastly, usual sea salt will do but Himalayan salt lends a beautiful depth of flavor to the entire dish.

This recipe for potato salad is not just easy but healthy as well because instead of the usual mayo, we are going to use yogurt with added dill for a more refreshing flavor.
Ingredients:
6 medium sized Yellow Potato
1 cup Plain Yogurt
2 medium size Onion, dice
2 tbsp. Chopped Fresh Dill
1/8 tsp. Mustard
A pinch of Salt and Pepper to taste
Cooking Directions:
Cut yellow US potato into quarter then boil in lightly salted water until tender, probably around 15 to 20 minutes.
Mix yogurt, chopped white onion, fresh dill, and mustard in a bowl. Season with salt and pepper.
Add the cooked yellow US potatoes to the dill yogurt dressing mixture. Mix gently.
Chill for around 10 minutes then serve.
