I was browsing through the list of recipes using KitchenAid Artisan Mini Stand Mixer that was handed to us during its launching that I went to early this year in the Philippines when I stumbled upon the recipe for Pimiento Cheese Spread. I thought it was an easy recipe. Easy, fast, and very convenient. Way different from my very own recipe for Southern Style Pimiento Cheese Spread which takes time to make.
The recipe from the list uses KitchenAid Stand Mixer which efficiency cuts the time it usually takes to make Pimiento Cheese Spread in half. So this recipe is perfect during crunch time when you need to get something fast and delicious on the table.
Since I am a master multi-tasker, I love the fact that I can do so much more while my KitchenAid Artisan Mini Stand Mixer is doing its job mixing the Pimiento Cheese Spread ingredients together. It goes to show how KitchenAid Stand Mixer can really make our life in the kitchen way easier.
The ingredients on the list were straightforward and simple. You probably have these ingredients in your pantry already. While I am happy with the result when I followed the recipe, I figured why not adapt the recipe and make a slight changes to where I see fit then share it here on the blog. So yes, this is loosely adapted from the KitchenAid Recipe list. Too bad they did not indicate the recipe creator, but credit goes to them.
If I have the liberty of time, I will go all gungho in roasting the pimiento and removing its charred skin before dicing it up to use in this recipe. I can also resort to slightly boiling the pimiento then dicing it. But let us keep up with the theme of being "fast and easy", which means we can use the bottled variant.
You can resort into using red bell peppers as pimiento can sometimes be elusive. Just make sure you boil it first until it's slightly soft before using it. However, please note that using pimiento can make a world of difference in terms of flavor and aroma. So, never substitute when what you really need is readily available.
Now, let me tell you that the quality of cheese you will use is of the upmost important. Hence, I suggest you use the best you can get your hands on. I highly recommend some good cheese selections from Real California Cheese which are widely available in our local supermarket.
While it is tempting to use the pre-shredded cheese we can get from supermarkets, please note that in this recipe, it is always better to shred the cheese your self. Pre-shredded cheese on the market are usually dusted with flour or other ingredients that prevents the shredded cheese to stick together and form a solid lumps. This will defeat the purpose in our recipe, because we want our shredded cheese to stick together as we combined it with other ingredients.
Some Pimiento Cheese Spread recipes can do without cream cheese. Some even resort to condensed milk which sounds interesting, but I haven't really tried it. For our recipe, we are going to use cream cheese because I cannot really imagine my Pimiento Cheese Spread recipe without it. Use the best brand you can get because this too plays a big role in building up the flavor.
Normally, I would use my very own homemade mayonnaise which recipe I will share with you in due course, I noticed that it always resulted into thin consistency. Since we want our Pimiento Cheese thick and creamy, by all means use your favorite store-bought mayonnaise. I swear by the goodness of Hellman's Mayonnaise but it is not easily available here in Manila, so I highly recommend the best one I have tried among the local brands.
The recipe from KitchenAid list calls for granulated garlic, celery salt, and paprika. All of which are well and good. Classic Pimiento Cheese recipes usually demand the use of these condiments as well. In my recipe however, I would normally skip these ingredients and use Worcestershire sauce instead for a full bodied flavor which do not need adjustment you would normally do when using salt and pepper. Instead of paprika, I use hot sauce because hey, Tabasco is life. Sriracha can be a good option too.
The best thing about this recipe is that you can just throw the ingredients together on your KitchenAid Stand Mixer Bowl attached with flat beater, set the machine to speed 4 and mix it for 5 minutes.
You can add the hot sauce and the worcestershire sauce initially together with the ingredients but you can also put it in as you go along. Then that's it. Very fast and easy, right? What's not to love, really.
I usually make big batches of Pimiento Cheese Spread and they would normally last for about two weeks, so long it's safely stored in a clean container and kept in a fridge. It can also be a good gift idea and a great option for potluck parties.
At times, I rely on this fast and easy recipe when
entertaining surprised guests at home. My friends who loves to visit me
at home at last minute notice usually request for Pimiento Cheese they
could munch on with some biscuits and cut up vegetables. It's a tried
and tested crowd-pleaser in any occasion.
Pimiento Cheese Spread Easy Recipe
You can never go wrong with the well-loved classic Pimiento Cheese Spread. Enjoy it as a filling to your sandwich or have it as a delicious dip for crackers and veggie sticks for fast finger food during gatherings. Either way, Pimiento Cheese Spread is bound to be a hit among cheese lovers. This is an easy recipe which made all the more easier since we are using KitchenAid Artisan Mini Stand Mixer.

Ingredients:
- 1 package (226g) Cream Cheese, softened
- 2 cups (225g) Grated Cheddar Cheese
- 1/4 cup (50g) Diced Pimiento
- 1/4 cup (50g) Mayonnaise
- 1 to 1/2 tbsp (22ml) Hot Sauce
- 1 to 1/2 tbsp (22ml) Worcestershire
Cooking Directions:
- In your KitchenAid Artisan Mini bowl, put in cream cheese, grated cheddar cheese, mayonnaise, and pimiento.
- Attach bowl and flat beater to the mixer. Turn to speed 4 and beat for about 5 minutes.
- Add worcestershire and hot sauce as you go along.
- Serve as a sandwich filling or dip for crackers and vegetable sticks.
My nephew loves having it as a sandwich spread and often ask me to pack
some extra he could share with his friends at school. Kids really loves cheese. My
nephew adores my Pimiento Cheese Spread recipe that is why I am very
mindful of the amount of hot sauce I put into it. Sometimes I will hold off the hot sauce and put it right after having a separate hot sauce-free batch for my nephew.
Pimiento Cheese Spread is really easy to do. But with the help of KitchenAid Artisan Mini Stand Mixer, it became easier and fast too. I love to multi-task in the kitchen but I am very particular with the quality of the output of whatever it is that I am making. So, I cannot really resort into using something which efficiency is not up to a good standard. This make me appreciate KitchenAid more, because as we all know, it is one of the brand we can all trust. It is really a well-worth kitchen investment, if I do say so myself.
