I posted a video of How To Cook Jjajangmyeon (Korean Black Bean Noodles) on my YouTube channel a little while back and I almost forgot to post an accompanying blog post for the complete recipe and detailed instruction here at YedyLicious. But it is here now, I am here now.
I feel bad that my blog is turning into a space-gathering dust for the past few months because I am so busy - I got a new job, you see. But let's reserve that story time for perhaps future blog post.
Because right now, while taking a break from studying the processes of my role for my new job and having a quick dinner, I am trying my best to somehow squeeze in finishing this blog post. Because this simple recipe for Jjajangmyeon is so easy and make and so delicious, I hope you could make it at home and share it with your loved ones too.
As mentioned on my YouTube channel, I have different variation of Jjajangmyeon recipe, but this one is one of the easiest. Someday soon, I might be able to find time to share all the other variations, for now, this easy one is a good start.
짜장면 Jjajangmyeon [Korean Black Bean Noodles Recipe]
Jjajang Noodles:
2-3 servings of Jjajang Noodles
For Black Bean Paste:
3 Tbsp. Chunjang / Korean Black Bean Paste
1/2 cup of vegetable oil
1 Tbsp. Sugar
For the Jajangmyeon Sauce:
2 Tbsp. cooking oil
1/4 cup chopped green onion
250 grams pork belly (I love grinding mine)
1 cup cubed potato
1/2 cup cubed zucchini
1/2 cup cubed white onion
2 - 3 Tbsp. soy sauce
2 Tbsp. sugar
2 Tbsp. oyster sauce
1 1/2 cup chicken stock
2 - 3 Tbsp. cornstarch water slurry
1-2 Tbsp. sesame oil
For garnishing: (optional)
sliced cucumber
toasted sesame seed
gochugaru
Direction:
For the Jjajang Noodles:
1.) Cook the noodles based on package direction
2.) Set aside
For the Chunjang / Korean Black Bean Paste:
1.) Stir fry 4 Tbsp of Chunjang / Korean Black Bean Paste in 1/2 cup vegetable oil for 3 to 5 minutes
2.) Add 1 Tbsp sugar then cook for another 2 minutes
3.) Set Aside
For the Korean Black Bean Noodle Sauce:
1.) Saute green onion in oil for about 2-4 minutes
2.) Add pork, then saute for 5 to 7 minutes
3.) Add potatoes and cook until slightly soft
4.) Add zucchini
5.) Then add the onions and cook for about 3 minutes
6.) Add soy sauce then stir
7.) Add the stir-fried chunjang / black bean paste
8.) Stir until the chunjang is well incorporated
9.) Cook for about 2 minutes
10.) Add sugar then stir and cook for another 2 minutes.
11.) Add the oyster sauce
12.) Add the stock, then stir
13.) Add the slurry (cornstarch+water)
14.) Mix thoroughly
15.) Drizzle sesame oil
16.) Mix well and set aside
To assemble Jjajangmyeon
1.) Place a serving size of cooked noodles on a plate or bowl.
2.) Pour preferred amount of sauce over the noodles.
3.) Garnish with sliced cucumber, sesa,e seeds, and gochugaru
4.) Serve and enjoy
This recipe for Jjajangmyeon is very easy and it yields a delicious bowl of Korean Black Bean Noodles you would want to indulge in while watching your favorite Korean Drama.
